This is the method that I like to use any time I'm cooking sweet potatoes (though it works great for regular potatoes as well). These end up beautifully crispy on the outside and sweet and creamy on the inside.

This method starts with a par-cook. Par-cooking is a technique where you partially cook a food one way, and then finish cooking it another way. And it’s especially effective for potatoes and sweet potatoes.
